I'm on a mission. A mission to clean up the sty. I've been going through closets, cupboards and drawers. Purging like a mo-fo.
I knew I had too many dishes. They're stashed in the kitchen, 2 hutches, under beds and in the hall closets. But this whole purging thing has brought to light that the dish situation is a little out of control. I am a dish-aholic!
We have:
Mom's wedding set - white china
Grandma Sam's red apple set
Plain red dishes for Christmas
Red Christmas bowls and small plates
Valentine bowls and small plates - conveniently goes with the plain red Christmas plates
The Spring set
The Summer set
Brown transferware
Thanksgiving pie plates - turkey and pumpkin
Plain cream set that "goes with everything"
Clear glass plates in shape of a sunflower
Clear glass restaurant plates
And the pile of misc. ironstone, pretty stuff
Today I'm taking steps to solve my problem. Spring and Summer are out the door! Thank you Cousin Lala! I feel like I've made some real progress!
But not 2 hours after gathering Cousin Lala's pile for delivery, the voices in my head start piping up. "What about the vintage floral and more transferware plates you always wanted? Now there's room!" Not to mention the thoughts that linger about the extra space to allow for my other "problem" - cookie tins. Dang it!
In celebration of Dad's birthday, today I'm making Miss Marcie's fabulous Hawiian Wedding Cake! This is THE BEST!! It's super simple and sooooo good.
Hawiian Wedding Cake
2 C sugar
2 C flour
2 eggs, beaten
1 tsp soda
1 20 oz can crushed pineapple (juice too)
1 C coconut
Put all ingredients in bowl and mix (not with mixer) just till all ingredients are wet. Use Pam spray. Pour in 9 x 13 pan.
350' for about 40 minutes - might need more
Cool
Cream Cheese Frosting
8 oz cream cheese
1/2 C butter
1 tsp vanilla
1-1/2 C powdered sugar
Mix, stir, and eat :). Frosting recipe usually makes enough for 2 cakes, but I use it all for extra taste.
Or, for those on a diet, you can just dust cake with plain powdered sugar.
Beyond YUMMY !! Happy Saturday :)
